dino feathers.

kale. 
people have been eating this superfood for over 2,000 years. 
it is packed with more than 100% of your daily requirement in vitamins A, K & C and is oozing with free-radical-neutralizing antioxidants {known as cancer-fighting properties}. also, kale's high fiber content aids in digestion and keeps inflammation at bay. yes, please!

so, sometimes it's hard for me to convince the hubster that eating kale is...super fun. 

enter: my fabulous recipe for dino feathers.

ingredients:

one bunch of rinsed, trimmed organic dinosaur kale
extra virgin olive oil
sea salt
pepper

1. preheat oven broiler {high}

2. cover cookie sheet with foil 
{if you are as lazy as me, this will make cleanup a breeze.}

3. lay each dino leaf in one layer on your cookie sheet.

4. brush each feather with olive oil

5. salt and pepper to taste

6. broil in the oven for 5 minutes. 
{each oven is different, so you may need to increase / decrease cook time and turn your feathers over mid-way if still not crispy. just keep an eye on 'em, as they burn quickly!}

7. enjoy as a side to a salad, fish, or well...by themselves! 

p.s.//when you eat these, you may want to nibble the tops and toss the ends. the bottoms tend to get a little tough. i didn't trim the ends because i think the feather presentation is kind of adorable. can kale be adorable?

big sur.

we drove to big sur, california to do some hiking last weekend. it was absolutely breathtaking. because i have no words to describe how gorgeous the water was and how beautiful the landscape was...



 {^^^believe it or not, that is about 25 feet of water...it was so so so clear!^^^}

my eagle scout.

can we just please take a moment and talk about how absolutely adorable  my husband is?
{san diego eagle scout, age 15}

i am so thankful for him in many ways. more selfishly, i am grateful for his eagle scout accomplishment, because that means that he can rescue me in any sort of situation. ever

your flashlight pen stops working in the dark? 
yeah, he knows why, disassembles it, scrapes off the corrosion, and reassembles it. and it works.

mama and baby ducks trapped in our empty pool? 
he rescues them. and then gives a lesson as to why we can't touch the babies because the mama will abandon them if we make them smell like humans.

your car breaks down and you burst into tears and start panicking because you have no idea what to do? 
no problem, he will just grab the emergency water in the trunk and somehow get the car started just long enough to get you to the nearest shop. 

you laugh at him because he buys headlamps {that shine in three different modes} for your camping trip and he forces you to bring the ridiculous one he bought for you? 
ok, i ended up being the girl that wore hers the entire trip.

zombie apocalypse? 
check. {all right, well i don't exactly have a scenario yet for this one, but after watching the walking dead with him, i'm positive we'd survive.}

maybe i'm the sad result of having an overly capable dad and brother that did everything for the little sister, and that's why i am sort of a dramatic damsel in distress. 
but let me tell you, i sure love it when my husband rescues me.
